One of the most covered songs in modern music history would be "Black Betty",  there's at least three dozen known recordings between 1933 and 2012.

Bill Bartlett is the featured guitarist on this song who leads in with a hot guitar lick and also some pretty distinct percussion that serves a great underscore.

"Black Betty" was often done acapella back in the early day without instruments.
